Cucumber Mint Soba Noodle Salad with Sesame Ginger Dressing

Ingredients:

Makes 4 to 6 servings⁣

Sesame Ginger Dressing:⁣

  • 1/4 cup avocado oil⁣

  • 3 tb toasted sesame oil⁣

  • 3 tb maple syrup⁣

  • 1 tb ginger paste/freshly grated ginger⁣

  • 2 limes juiced⁣

  • 1/2 tsp kosher salt⁣⁣

    Soba Noodle Salad:⁣

  • 1 9oz package soba noodles⁣

  • 5 persian cucumbers, thinly sliced⁣

  • 1 can garbanzo beans, drained and rinsed well⁣

  • 1/2 cup chopped mint, packed⁣

  • 1/4 cup italian parsley, chopped⁣

  • 1/2 red onion, finely diced⁣

  • 1 bunch green onion, sliced⁣

  • 3 tb sesame seeds⁣

    Instructions:

  • First, prepare the dressing. In a small bowl, whisk together the dressing ingredients. Taste and set aside.

  • Next, bring a large pot of water to a boil. Add the soba noodles and cook for 4 minutes (or according to package instructions). Drain and rinse with cold water to stop the cooking, and transfer to a large mixing bowl.

  • Add the rest of the salad components: cucumbers, garbanzo beans, mint, parsley, red onion, green onion, and sesame seeds.

  • Pour the dressing over the salad and toss to coat well. Plate and enjoy!
