Cucumber Mint Soba Noodle Salad with Sesame Ginger Dressing
Ingredients:
Makes 4 to 6 servings
Sesame Ginger Dressing:
1/4 cup avocado oil
3 tb toasted sesame oil
3 tb maple syrup
1 tb ginger paste/freshly grated ginger
2 limes juiced
1/2 tsp kosher salt
Soba Noodle Salad:
1 9oz package soba noodles
5 persian cucumbers, thinly sliced
1 can garbanzo beans, drained and rinsed well
1/2 cup chopped mint, packed
1/4 cup italian parsley, chopped
1/2 red onion, finely diced
1 bunch green onion, sliced
3 tb sesame seeds
Instructions:
First, prepare the dressing. In a small bowl, whisk together the dressing ingredients. Taste and set aside.
Next, bring a large pot of water to a boil. Add the soba noodles and cook for 4 minutes (or according to package instructions). Drain and rinse with cold water to stop the cooking, and transfer to a large mixing bowl.
Add the rest of the salad components: cucumbers, garbanzo beans, mint, parsley, red onion, green onion, and sesame seeds.
Pour the dressing over the salad and toss to coat well. Plate and enjoy!
