Sheet Mediterranean Pinwheel Kebabs
Ingredients:
For the kebabs:
1 lb ground beef (I used 85/15)
Salt & pepper, to taste
1 tbsp onion powder
1 tbsp oregano or thyme
1 tbsp paprika (regular or smoked)
1/2 tsp cayenne pepper
Flavor mix:
1 small yellow onion
2 garlic cloves
3 tbsp pine nuts or walnuts
Large handful fresh parsley
For the tray bake:
Cherry tomatoes
Onion wedges
Olive oil
Salt
Chili flakes
For the yogurt sauce:
1 cup Greek yogurt
3 tbsp finely chopped parsley
2 tbsp finely chopped mint
Salt & pepper
1 tbsp olive oil
Squeeze of lemon
Instructions:
Mix ground beef with salt, pepper, onion powder, oregano/thyme, paprika, and cayenne.
Process onion, garlic, nuts, and parsley—then mix into the meat. Let sit for 1 hour if you can for deeper flavor.
Divide into 5 portions. Spread thinly onto tortillas.
Roll tightly, slice into pinwheel pieces, and skewer.
Place on a parchment-lined sheet pan with tomatoes and onion wedges. Drizzle with olive oil, salt, and chili flakes.
Bake at 400°F (200°C) for 25–27 minutes. Spoon over any juices if needed for extra flavor.
Mix all yogurt sauce ingredients together.
Serve with yogurt sauce and top with parsley, sumac, or chili flakes.
