Crispy Sweet Potato Toasts Loaded with Creamy Avocado and Eggy Tofu Scramble
Ingredients:
1 large sweet potato
½ tbsp olive oil
2 small avocados
tofu scramble:
300g firm tofu
½ tbsp olive oil
1 tbsp garlic powder
2 tbsp nutritional yeast
1 tbsp chickpea flour
1 tsp turmeric
1 tsp black pepper
½ tsp black salt
150ml oat milk
Instructions:
Slice sweet potato (1-1.5cm), brush w/ oil, air fry at 200C for 14-17 min.
Crumble Tofu, fry in oil ~10 min.
Whisk remaining scramble ingredients, add to pan, cook 5 min. stack w/ avo, season and done. Enjoy!
