Crispy Sweet Potato Toasts Loaded with Creamy Avocado and Eggy Tofu Scramble

Ingredients:

  • 1 large sweet potato

  • ½ tbsp olive oil

  • 2 small avocados

  • tofu scramble:

  • 300g firm tofu

  • ½ tbsp olive oil

  • 1 tbsp garlic powder

  • 2 tbsp nutritional yeast

  • 1 tbsp chickpea flour

  • 1 tsp turmeric

  • 1 tsp black pepper

  • ½ tsp black salt

  • 150ml oat milk

    Instructions:

  • Slice sweet potato (1-1.5cm), brush w/ oil, air fry at 200C for 14-17 min.

  • Crumble Tofu, fry in oil ~10 min.

  • Whisk remaining scramble ingredients, add to pan, cook 5 min. stack w/ avo, season and done. Enjoy!
